- ¼ cup granulated sugar
- 1/4 tsp salt
- 1 large egg yolk
- 1/4 cup water, ice-cold
- 2 cups whole milk
- 3/4 cup granulated sugar (divided)
- 6 large egg yolks
- 2 tsp pure vanilla extract
- 2 cups mixed seasonal fruits (e.g., strawberries, kiwis, blueberries)
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly. Add egg yolk and ice water; mix until dough forms.
- Press dough into a tart pan evenly. Bake for 20 minutes until golden brown. Let cool.
- In a saucepan, warm milk and half the sugar over medium heat.
- Whisk remaining sugar with egg yolks until pale. Gradually add warm milk to yolks while whisking continuously to prevent scrambling.
- Return mixture to saucepan and stir over low heat until thickened (8-10 minutes). Remove from heat and stir in vanilla extract; cool before pouring into the crust.
- Once cooled, arrange sliced fruits artistically on top of the custard.
