- 1 can (15 oz) chickpeas, rinsed and drained
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 cup fresh green beans, trimmed and blanched
- 1/2 cup red onion, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 3 tbsp lemon juice (freshly squeezed)
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse canned chickpeas and kidney beans under cool water until clear.
- Blanch the green beans in boiling water for 3-4 minutes; then drain and plunge into ice water.
- Dice the red onion and halve the cherry tomatoes.
- In a large bowl, combine all prepared ingredients: chickpeas, kidney beans, green beans, onion, tomatoes, and parsley.
- Drizzle with olive oil and lemon juice; season with salt and pepper. Toss gently to combine.
- Let sit at room temperature for at least 30 minutes before serving.
