  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 cup fresh green beans, trimmed and blanched
  • 1/2 cup red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse canned chickpeas and kidney beans under cool water until clear.
  2. Blanch the green beans in boiling water for 3-4 minutes; then drain and plunge into ice water.
  3. Dice the red onion and halve the cherry tomatoes.
  4. In a large bowl, combine all prepared ingredients: chickpeas, kidney beans, green beans, onion, tomatoes, and parsley.
  5. Drizzle with olive oil and lemon juice; season with salt and pepper. Toss gently to combine.
  6. Let sit at room temperature for at least 30 minutes before serving.
