Ingredients

Scale
  • 4 ripe peaches (about 2 cups chopped)
  • 1 cup sparkling prosecco
  • 1/4 cup simple syrup (made from equal parts sugar and water)
  • 2 tablespoons freshly squeezed lemon juice
  • Popsicle molds

Instructions

  1. Wash and slice the peaches into chunks; leave the skins on for added texture if desired.
  2. In a blender, combine peach chunks, lemon juice, and simple syrup. Blend until smooth.
  3. Gradually pour in the sparkling prosecco while blending to incorporate air.
  4. Carefully fill your popsicle molds with the mixture using a funnel if necessary—leave some space at the top for expansion.
  5. Freeze for at least 4 hours or until solid.
  6. To release popsicles, run warm water over the outside of the molds.
