  • 2 ¼ tsp active dry yeast
  • ¼ cup extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 tbsp salt
  • 1 tbsp fresh rosemary or thyme, chopped

Instructions

  1. Combine warm water and yeast in a bowl; let sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Add activated yeast mixture and olive oil; stir until shaggy dough forms.
  3. Knead dough for 5-7 minutes until smooth. Place in a greased bowl, cover with damp cloth, and let rise until doubled (about 1 hour).
  4. Punch down the dough; fold in garlic, Parmesan, and herbs until evenly distributed.
  5. Transfer to a greased baking sheet, shape into a rectangle about 1 inch thick, cover again, and let rise for another 30 minutes.
  6. Preheat oven to 425°F (220°C). Poke dimples in the dough with fingers, drizzle with olive oil, sprinkle extra Parmesan on top.
  7. Bake for 20-25 minutes until golden brown.
