  • 2 tsp ground ginger
  • 1 tbsp ground cinnamon
  • ½ tsp salt
  • ¾ cup unsalted butter, at room temperature
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • Coarse sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.
  3. In another bowl, cream butter and both sugars until fluffy. Add eggs and vanilla; mix well.
  4. Gradually combine dry ingredients with wet ingredients using low speed until just mixed.
  5. Roll tablespoon-sized balls of dough in coarse sugar and place on parchment-lined baking sheets.
  6. Bake for 10-12 minutes until edges are set but centers remain soft.
  7. Cool on baking sheets for 5 minutes before transferring to wire racks.
