  • 1 tsp pure vanilla extract
  • 1/2 tsp salt
  • Optional: 1/2 cup chocolate chips or nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy (about 3 minutes).
  3. Beat in each egg one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, oats, and salt. Gradually fold this mixture into the wet ingredients until just combined.
  5. If desired, stir in chocolate chips or nuts.
  6. Drop generous scoops of dough onto the prepared baking sheet about two inches apart.
  7. Bake for 12-15 minutes until edges are golden but centers remain soft. Cool on the baking sheet for five minutes before transferring to wire racks.
