Description

Greek Yogurt Cucumber Salad is a refreshing, creamy dish perfect for summer gatherings. With crisp cucumbers, rich Greek yogurt, and zesty herbs, this salad bursts with flavor and color. Easy to prepare in just minutes, it’s an ideal side for barbecues or a light snack that will transport you to the Mediterranean. Serve chilled and enjoy the delightful crunch!

Ingredients

Scale
  • 2 cups fresh cucumbers (sliced)
  • 1 cup plain full-fat Greek yogurt
  • 2 tablespoons fresh dill (chopped)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 clove garlic (minced)
  • Salt and pepper (to taste)

Instructions

  1. Wash and thinly slice the cucumbers. If desired, sprinkle with salt and let sit for 10 minutes to reduce water content.
  2. In a bowl, mix Greek yogurt, minced garlic, lemon juice, chopped dill, salt, and pepper until smooth.
  3. Fold sliced cucumbers into the yogurt mixture until well coated.
  4. Cover and chill in the fridge for at least 30 minutes before serving. Garnish with extra dill if desired.
