  • 4 fresh artichokes
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse artichokes under cold water and trim the spiky tips.
  2. In a large pot, boil salted water with lemon juice. Cook artichokes for about 30 minutes until tender.
  3. Preheat grill to medium-high heat. Halve artichokes and remove the fuzzy choke.
  4. In a small saucepan, melt butter over low heat and stir in minced garlic until fragrant (about 1-2 minutes).
  5. Brush artichokes with olive oil, season with salt and pepper, and grill cut-side down for 5-7 minutes until charred.
