  • 6 cups fresh romaine lettuce, chopped
  • 1 cup freshly grated Parmesan cheese (about 100g)
  • ½ cup homemade Caesar dressing
  • 2 cups day-old baguette or Italian bread, cubed
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Marinate chicken breasts in olive oil, garlic powder, salt, and pepper for at least 30 minutes.
  2. Grill marinated chicken over medium-high heat for 6-7 minutes per side until fully cooked (internal temperature of 165°F/75°C). Let cool slightly before slicing.
  3. Preheat oven to 400°F (200°C). Toss bread cubes with olive oil, garlic powder, salt, and pepper; spread on a baking sheet. Bake for 10-12 minutes until golden brown and crunchy.
  4. In a large bowl, combine chopped romaine lettuce, sliced grilled chicken, Parmesan cheese, and Caesar dressing. Toss gently.
  5. Top the salad with homemade croutons just before serving to maintain crunchiness.
