  • 1/2 cup mayonnaise
  • 1/2 cup crumbled cotija cheese
  • Juice of 1 lime
  • 1 tsp chili powder (adjust to taste)
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat your grill to medium-high heat (400°F or 200°C).
  2. Remove husks and silk from the corn cobs, trimming any broken ends.
  3. Grill the corn directly on the grates for 10-15 minutes, rotating occasionally until lightly charred.
  4. In a bowl, mix mayonnaise, lime juice, chili powder, and half of the cotija cheese until smooth.
  5. Remove corn from the grill and generously coat with the topping mixture.
  6. Sprinkle remaining cotija cheese and chopped cilantro on top before serving immediately.
