  • 1 sheet store-bought puff pastry
  • 8 oz fresh mushrooms, finely chopped
  • 2 shallots, minced
  • 2 tbsp Dijon mustard
  • 1 egg (for egg wash)
  • 2 tbsp olive oil
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. 1. Prep Ingredients: Finely chop mushrooms and shallots.
  2. 2. Sauté Filling: Heat olive oil in a skillet over medium heat. Add shallots; cook until translucent. Add mushrooms; sauté until moisture evaporates.
  3. 3. Season: Stir in thyme, parsley, salt, and pepper. Allow to cool slightly.
  4. 4. Prepare Pastry: Roll out puff pastry on a floured surface into a rectangle large enough to wrap around the filling.
  5. 5. Assemble Wellington: Spread Dijon mustard over the cooled mushroom mixture. Layer ground beef and then the mushroom mixture on top before tightly wrapping it in pastry.
