  • 3 cups all-purpose flour
  • 2 tsp active dry yeast
  • 1 ¼ cups warm water (100°F to 110°F)
  • 4 tbsp extra virgin olive oil (divided)
  • 1 cup finely grated Gruyère cheese (divided)
  • 2 tbsp fresh thyme (chopped)
  • 1 tsp salt

Instructions

  1. In a large bowl, combine warm water and active dry yeast. Let it sit for 5–10 minutes until frothy.
  2. Mix in flour and salt until a shaggy dough forms.
  3. Knead the dough on a floured surface for 5–7 minutes until smooth and elastic.
  4. Fold in half of the Gruyère and thyme for added flavor.
  5. Place the dough in an oiled bowl, cover with plastic wrap, and let it rise in a warm spot for 1–2 hours, or until doubled in size.
  6. After rising, punch down the dough and transfer it to an oiled baking sheet. Use your fingers to create dimples across the surface.
  7. Preheat your oven to 425°F (220°C). Drizzle remaining olive oil over the dough, sprinkle with remaining cheese and thyme, then bake for 20–25 minutes until golden brown.
