  • 2 lbs chuck roast, cut into 1-inch cubes
  • 1 cup Guinness stout
  • 3 large carrots, sliced thick
  • 2 medium yellow onions, diced
  • 3 medium Yukon Gold potatoes, cubed
  • 4 cups low-sodium beef broth
  • 2 tsp fresh thyme leaves
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare the ingredients by chopping the chuck roast, onions, carrots, and potatoes.
  2. Heat olive oil in a Dutch oven over medium-high heat and sear half the beef until browned on all sides (about 5 minutes). Remove and set aside.
  3. In the same pot, sauté onions and carrots until softened (4-5 minutes).
  4. Pour in the Guinness stout, scraping up browned bits from the bottom. Add beef broth and mix well.
  5. Return the seared beef to the pot along with bay leaves and thyme; bring to a simmer.
  6. Cover and let it cook on low for 2-3 hours until meat is fork-tender. Add potatoes in the last hour of cooking.
