- 2 lbs chuck roast, cut into 1-inch cubes
- 1 cup Guinness stout
- 3 large carrots, sliced thick
- 2 medium yellow onions, diced
- 3 medium Yukon Gold potatoes, cubed
- 4 cups low-sodium beef broth
- 2 tsp fresh thyme leaves
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prepare the ingredients by chopping the chuck roast, onions, carrots, and potatoes.
- Heat olive oil in a Dutch oven over medium-high heat and sear half the beef until browned on all sides (about 5 minutes). Remove and set aside.
- In the same pot, sauté onions and carrots until softened (4-5 minutes).
- Pour in the Guinness stout, scraping up browned bits from the bottom. Add beef broth and mix well.
- Return the seared beef to the pot along with bay leaves and thyme; bring to a simmer.
- Cover and let it cook on low for 2-3 hours until meat is fork-tender. Add potatoes in the last hour of cooking.
