  • ½ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 ½ tsp baking powder
  • 2 large eggs (room temperature)
  • 1 cup whole milk
  • ½ cup melted butter
  • 2 tsp vanilla extract
  • ½ cup raspberry jam
  • For frosting:
  • 2 cups powdered sugar
  • ½ cup softened butter
  • 2 tbsp milk
  • Red food coloring

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and a pinch of salt.
  3. Add eggs, milk, melted butter, and vanilla extract; mix until just combined.
  4. Fill each cupcake liner with about one tablespoon of batter, add half a teaspoon of raspberry jam in the center, then top with more batter until three-quarters full.
  5. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool on a wire rack.
  6. For the frosting, beat softened butter with powdered sugar and milk until fluffy; gradually add red food coloring until desired hue is reached.
  7. Frost cooled cupcakes and serve.
