Ingredients

  • 4 large carrots
  • 3 Yukon gold potatoes
  • 2 yellow onions
  • 3 garlic cloves
  • 4 cups low-sodium beef broth
  • Fresh thyme
  • Bay leaves
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown cubed chuck roast in batches for 8-10 minutes until golden.
  2. Remove the meat and sauté onions and garlic in the same pot until translucent (about 3-4 minutes).
  3. Add carrots, potatoes, thyme, bay leaves, salt, pepper, and broth; return the browned meat to the pot.
  4. Bring to a gentle boil, then reduce heat to low and cover. Simmer for 1.5 – 2 hours until meat is fork-tender.
  5. For a thicker stew, mix cornstarch with cold water and stir in during the last 15 minutes of cooking.
  6. Serve warm with crusty bread or over mashed potatoes.
