- 3 Yukon gold potatoes

Instructions
- Heat olive oil in a large pot over medium-high heat. Brown cubed chuck roast in batches for 8-10 minutes until golden.
- Remove the meat and sauté onions and garlic in the same pot until translucent (about 3-4 minutes).
- Add carrots, potatoes, thyme, bay leaves, salt, pepper, and broth; return the browned meat to the pot.
- Bring to a gentle boil, then reduce heat to low and cover. Simmer for 1.5 – 2 hours until meat is fork-tender.
- For a thicker stew, mix cornstarch with cold water and stir in during the last 15 minutes of cooking.
- Serve warm with crusty bread or over mashed potatoes.
