Ingredients

  • 1 lb ground beef (80/20)
  • 1 cup fresh breadcrumbs
  • 2 large eggs
  • ¼ cup fresh parsley, chopped
  • 2 medium carrots, diced
  • 2 medium potatoes, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) crushed tomatoes
  • 4 cups low-sodium beef broth
  • 2 tsp Italian seasoning blend
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping the vegetables into bite-sized pieces.
  2. In a large bowl, mix the ground beef, breadcrumbs, eggs, parsley, salt, and pepper until just combined.
  3. Roll the mixture into golf ball-sized meatballs and set aside.
  4. Heat olive oil in a large pot over medium heat. Sauté onions until soft (about 5 minutes), then add garlic and cook until fragrant.
  5. Stir in the diced carrots and potatoes. Add crushed tomatoes and beef broth; bring to a gentle simmer.
  6. Carefully drop the meatballs into the pot. Cover partially and cook for about 20–25 minutes or until everything is tender.
