- 1 lb ground beef (80/20)
- 1 cup fresh breadcrumbs
- 2 large eggs
- ¼ cup fresh parsley, chopped
- 2 medium carrots, diced
- 2 medium potatoes, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) crushed tomatoes
- 4 cups low-sodium beef broth
- 2 tsp Italian seasoning blend
- Salt and pepper to taste
Instructions
- Prepare all ingredients by chopping the vegetables into bite-sized pieces.
- In a large bowl, mix the ground beef, breadcrumbs, eggs, parsley, salt, and pepper until just combined.
- Roll the mixture into golf ball-sized meatballs and set aside.
- Heat olive oil in a large pot over medium heat. Sauté onions until soft (about 5 minutes), then add garlic and cook until fragrant.
- Stir in the diced carrots and potatoes. Add crushed tomatoes and beef broth; bring to a gentle simmer.
- Carefully drop the meatballs into the pot. Cover partially and cook for about 20–25 minutes or until everything is tender.
