- 4 bone-in chicken thighs (about 1.5 lbs)
- 4 tbsp unsalted butter (softened)
- 2 cloves garlic (minced)
- 2 tsp fresh thyme (chopped)
- 2 tsp fresh rosemary (chopped)
- 2 cups seasonal vegetables (carrots, bell peppers, zucchini, cut into bite-sized pieces)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a bowl, mix softened butter with minced garlic, thyme, rosemary, salt, and pepper until well combined.
- Pat the chicken thighs dry and rub half of the herb butter under and on top of the skin.
- Toss the chopped vegetables in olive oil, salt, and pepper; spread them on one side of the baking sheet.
- Place the chicken on the other side of the baking sheet and roast for 35-40 minutes or until the internal temperature reaches 165°F (75°C).
- Let rest for 5 minutes before serving with roasted veggies.
