  • 4 bone-in chicken thighs (about 1.5 lbs)
  • 4 tbsp unsalted butter (softened)
  • 2 cloves garlic (minced)
  • 2 tsp fresh thyme (chopped)
  • 2 tsp fresh rosemary (chopped)
  • 2 cups seasonal vegetables (carrots, bell peppers, zucchini, cut into bite-sized pieces)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix softened butter with minced garlic, thyme, rosemary, salt, and pepper until well combined.
  3. Pat the chicken thighs dry and rub half of the herb butter under and on top of the skin.
  4. Toss the chopped vegetables in olive oil, salt, and pepper; spread them on one side of the baking sheet.
  5. Place the chicken on the other side of the baking sheet and roast for 35-40 minutes or until the internal temperature reaches 165°F (75°C).
  6. Let rest for 5 minutes before serving with roasted veggies.
