  • 1/2 cup unsalted butter (room temperature)
  • 2 tablespoons fresh thyme (chopped)
  • 2 tablespoons fresh rosemary (chopped)
  • 2 tablespoons fresh sage (chopped)
  • 6 cloves garlic (whole)
  • 3 ripe pears (Bartlett or Anjou), cut into wedges
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. In a bowl, combine butter, thyme, rosemary, sage, garlic, salt, and pepper. Mix well.
  4. Gently slide herb butter under the chicken skin and rub some on top.
