  • 1 lb lean ground beef
  • 1 medium sweet yellow onion, finely chopped
  • 1 medium carrot, finely diced
  • 1 stalk celery, finely chopped
  • 3 cloves fresh garlic, minced
  • 28 oz can San Marzano tomatoes
  • 1/2 cup red wine
  • 2 tsp dried oregano
  • 1/4 cup fresh basil, chopped (added at the end)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, celery, and carrot until onions are translucent (about 5-7 minutes).
  2. Stir in minced garlic and cook until fragrant (about 1 minute).
  3. Increase heat to medium-high and add ground beef. Cook until browned, breaking up clumps (8-10 minutes).
  4. Deglaze the pan with red wine and let it simmer for about 3-4 minutes.
  5. Add canned tomatoes, oregano, salt, and pepper. Bring to a gentle boil before reducing the heat.
  6. Simmer uncovered on low heat for at least 45 minutes until thickened; stir occasionally.
  7. Finish with fresh basil just before serving.
