  • 1 lb lean ground beef
  • 1/2 cup plain breadcrumbs
  • 1/4 cup honey
  • 4 garlic cloves, minced
  • 1 cup long-grain rice
  • 2 cups water
  • 1/4 cup low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish.
  2. In a bowl, mix ground beef, breadcrumbs, minced garlic, salt, and pepper until just combined. Form into small meatballs (about 1 inch).
  3. Brown meatballs in a skillet over medium heat for about 5 minutes.
  4. In another bowl, whisk honey, soy sauce, and sesame oil then pour over the browned meatballs.
  5. Scatter uncooked rice in the baking dish and pour water over it. Place glazed meatballs on top and cover with foil.
  6. Bake for 25-30 minutes until cooked through. Garnish with chopped green onions before serving.
