  • 2 lbs boneless chicken thighs
  • 3 tbsp jerk spice mix
  • 2 tbsp fresh thyme leaves
  • 2 tbsp lime juice (freshly squeezed)
  • 4 garlic cloves (minced)
  • 1 Scotch bonnet pepper (finely chopped, optional)
  • 2 tbsp brown sugar
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Create Your Marinade: In a blender, combine jerk spice mix, thyme, lime juice, garlic, Scotch bonnet pepper, brown sugar, and soy sauce. Blend until smooth.
  2. Marinate Chicken: Place chicken in a bowl or zip-top bag and pour half the marinade over it. Ensure all pieces are coated. Refrigerate for at least 2 hours, preferably overnight.
  3. Preheat Grill/Oven: Heat an outdoor grill to medium-high (400°F) or preheat the oven to 425°F.
  4. Cook Chicken: Grill each thigh for about 6-7 minutes per side or bake in the oven for 25-30 minutes until cooked through (internal temperature should reach 165°F).
  5. Rest & Serve: Allow chicken to rest for 5 minutes before slicing. Serve with coconut rice or grilled vegetables.
