- 9 whole wheat lasagna noodles
- 1 lb lean ground turkey
- 4 cups fresh spinach
- 15 oz part-skim ricotta cheese
- 2 cups low-sugar marinara sauce
- 1.5 cups part-skim shredded mozzarella cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Cook the lasagna noodles in salted boiling water according to package instructions until al dente. Drain and lay flat on parchment paper.
- In a skillet over medium heat, sauté olive oil and ground turkey until browned. Add spinach until wilted.
- Mix ricotta cheese with Italian seasoning, salt, and pepper in a bowl until creamy.
- In a baking dish, spread marinara sauce at the bottom. Layer noodles, half the turkey-spinach mixture, half the ricotta mixture, then repeat. Top with mozzarella cheese.
