  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • Juice of 2 fresh lemons
  • Zest of 1 lemon
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water until clear. Chop onion, dice carrots, and mince garlic.
  2. In a large pot over medium heat, drizzle olive oil and sauté the chopped onion and carrots for about 5 minutes until softened.
  3. Add minced garlic and cumin; stir continuously for another minute until fragrant.
  4. Stir in rinsed lentils and vegetable broth; bring to a boil then reduce heat to simmer for 20-25 minutes until lentils are tender.
  5. Once cooked, add lemon juice and zest; stir well to combine. Adjust salt and pepper to taste before serving.
