Ingredients

  • 2 pounds Yukon Gold potatoes, cubed
  • 3 cups fresh corn kernels (approximately 4 ears)
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • Juice of 2 limes
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1/4 cup chopped cilantro
  • 1/4 cup green onions, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup bacon bits (optional)

Instructions

  1. Boil the cubed potatoes in salted water for about 15 minutes until fork-tender. Drain and cool.
  2. Grill or boil the corn until tender; if grilling, char slightly for added flavor. Cut kernels off the cob.
  3. In a large bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  4. Add cooled potatoes and corn to the bowl along with cilantro and green onions. Gently fold until coated.
  5. Top with cheddar cheese and bacon bits; mix gently again.
  6. Chill in the refrigerator for at least 30 minutes before serving.
