- 3 cups fresh corn kernels (approximately 4 ears)
- 1 cup mayonnaise
- 1/2 cup sour cream
- Juice of 2 limes
- 1 tsp chili powder
- Salt and pepper to taste
- 1/4 cup chopped cilantro
- 1/4 cup green onions, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup bacon bits (optional)
Instructions
- Boil the cubed potatoes in salted water for about 15 minutes until fork-tender. Drain and cool.
- Grill or boil the corn until tender; if grilling, char slightly for added flavor. Cut kernels off the cob.
- In a large bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
- Add cooled potatoes and corn to the bowl along with cilantro and green onions. Gently fold until coated.
- Top with cheddar cheese and bacon bits; mix gently again.
- Chill in the refrigerator for at least 30 minutes before serving.
