Description

Ingredients

  • 2 medium sweet potatoes (about 500g)
  • 1 cup sharp cheddar cheese, shredded
  • 4 strips bacon, cooked and chopped
  • ½ cup sour cream
  • 2 green onions, finely chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and dry the sweet potatoes.
  2. Roast the sweet potatoes directly on the oven rack or on a baking sheet for about 45 minutes until tender. Let cool slightly.
  3. Halve each potato lengthwise and scoop out some flesh, leaving about ¼ inch around the edges.
  4. Brush the insides with olive oil and season with salt and pepper. Bake for an additional 10 minutes to crisp up the skins.
  5. Fill each skin with cheddar cheese and bacon bits. Return to the oven for another 5-10 minutes until cheese is melted.
  6. Top with sour cream and green onions before serving warm.
