  • 2 cups cake flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (room temperature)
  • 3 large eggs (room temperature)
  • 1 tsp pure vanilla extract
  • 2 Earl Grey tea bags
  • 1 cup heavy cream (cold)
  • 1 cup powdered sugar (sifted)
  • 2 tsp baking powder

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Boil 1 cup of water; steep the Earl Grey tea bags for about 5 minutes until fragrant. Allow to cool slightly.
  3. In a mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, followed by vanilla extract.
  4. In another bowl, whisk together cake flour and baking powder. Gradually add this mixture and cooled tea to the butter mixture.
  5. Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
  7. Whip cold heavy cream with powdered sugar until stiff peaks form; frost generously between layers and on top.
