Description

Mango sticky rice popsicles are a tropical delight that blend the luscious sweetness of ripe mangoes with the creamy texture of coconut-infused sticky rice. Ingredients

  • 2 ripe mangoes, peeled and chopped
  • 1 cup glutinous rice
  • 1 cup full-fat coconut milk
  • 1/3 cup granulated sugar
  • 1/4 tsp salt
  • 1 tbsp fresh lime juice

Instructions

  1. Rinse the glutinous rice until the water is clear, then soak overnight.
  2. Drain and steam the rice in a cheesecloth-lined steamer for 20-25 minutes until tender.
  3. In a saucepan, gently heat coconut milk, sugar, and salt until dissolved (do not boil).
  4. Mix half of the coconut mixture with the steamed rice; let sit for 30 minutes to absorb flavors.
  5. Blend mango chunks with lime juice until smooth.
  6. Layer the sticky rice mixture and mango puree in popsicle molds; insert sticks and freeze overnight.
