- 1/2 cup unsalted butter (cold)
- 2 tbsp culinary grade matcha powder
- 1/2 cup powdered sugar
- 1/4 cup almond paste
- 1/2 cup whole milk (warm)
- 1 tsp active dry yeast
- 1/2 tsp salt
Instructions
- In a mixing bowl, combine warm milk and active dry yeast; let it sit until bubbly.
- In another bowl, whisk together flour and salt. Add the yeast mixture and mix until just combined.
- Knead the dough on a floured surface for about 5 minutes until smooth.
- Roll cold butter into a rectangle and place it on the dough. Fold the dough over the butter and roll it out again.
- Chill, then fold in thirds several times to create layers.
- Spread almond paste and sprinkle matcha on rolled-out dough before cutting into triangles.
- Roll each triangle from the wide end to form croissants and place them on a baking sheet.
- Let rise for about 30 minutes, then bake at 375°F (190°C) for 20-25 minutes until golden brown.
