Description

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter (cold)
  • 2 tbsp culinary grade matcha powder
  • 1/2 cup powdered sugar
  • 1/4 cup almond paste
  • 1/2 cup whole milk (warm)
  • 1 tsp active dry yeast
  • 1/2 tsp salt

Instructions

  1. In a mixing bowl, combine warm milk and active dry yeast; let it sit until bubbly.
  2. In another bowl, whisk together flour and salt. Add the yeast mixture and mix until just combined.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Roll cold butter into a rectangle and place it on the dough. Fold the dough over the butter and roll it out again.
  5. Chill, then fold in thirds several times to create layers.
  6. Spread almond paste and sprinkle matcha on rolled-out dough before cutting into triangles.
  7. Roll each triangle from the wide end to form croissants and place them on a baking sheet.
  8. Let rise for about 30 minutes, then bake at 375°F (190°C) for 20-25 minutes until golden brown.
