  • 1/4 cup unsalted butter (cold)
  • 2 tbsp granulated sugar
  • 1/2 tsp ground cinnamon
  • 1 medium Granny Smith apple (peeled and sliced)
  • 1 tsp lemon juice
  • 1 egg (for egg wash)
  • Pinch of salt

Instructions

  1. Prepare the crust: In a bowl, mix flour and salt. Cut in cold butter until it resembles coarse crumbs. Gradually add ice water until dough forms. Refrigerate for 30 minutes.
  2. Make the filling: Toss apple slices with sugar, cinnamon, lemon juice, and salt; let sit for flavors to meld.
  3. Roll out the dough on a floured surface to about 1/8 inch thick. Cut out circles using a cookie cutter.
  4. Place each circle in greased muffin tins and fill with apple mixture without overstuffing.
  5. Top with another dough circle or lattice design; brush with egg wash. Bake at 375°F (190°C) for 25-30 minutes until golden brown.
