- 1 cup graham cracker crumbs
- 4 tbsp unsalted butter, melted
- 8 oz cream cheese, softened
- ½ cup powdered sugar, sifted
- ½ cup creamy peanut butter
- 1 tsp vanilla extract
- 12 mini peanut butter cups, chopped for garnish
Instructions
- Preheat oven to 325°F (160°C). Combine graham cracker crumbs and melted butter in a bowl. Press the mixture into the bottom of cupcake liners to form the crust.
- Bake for 8-10 minutes until set. Allow to cool slightly.
- In a mixing bowl, beat cream cheese, powdered sugar, peanut butter, and vanilla until smooth.
- Spoon filling over each cooled crust and leave space for toppings. Press half of a mini peanut butter cup into each cheesecake.
- Chill in the fridge for at least 2 hours before serving.
