  • 1 pre-made pie crust
  • 4 large eggs
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 4 strips bacon, cooked and chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the spinach and mushrooms in a splash of olive oil until tender.
  3. Cook the bacon in another skillet until crispy; drain on paper towels and chop into pieces.
  4. In a bowl, whisk together eggs, milk, salt, and pepper. Stir in sautéed vegetables and bacon.
  5. Place the pie crust in muffin tins and fill each with the egg mixture about three-quarters full.
  6. Bake for 20-25 minutes or until golden brown on top and set in the center.
