Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan and line it with parchment paper.
- In a saucepan, melt the butter and cocoa powder over low heat until smooth. Remove from heat.
- Whisk in the sugar until fully combined, then add eggs one at a time until glossy.
- In a separate bowl, sift together flour and salt. Gradually fold this into the chocolate mixture.
- Add mint extract and chocolate chips, folding gently to combine.
- Pour the batter into the prepared pan, spreading evenly. Bake for 20-25 minutes or until a toothpick comes out with moist crumbs.
- Cool completely before cutting into squares.
