  • 4 salmon fillets (approximately 6 oz each)
  • 3 tbsp white miso paste
  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tbsp sesame oil
  • 2 cups bok choy, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix together miso paste, honey, soy sauce, rice vinegar, ginger, and garlic until smooth.
  3. Place salmon fillets skin-side down on the baking sheet and generously brush with the miso glaze.
  4. Bake in the preheated oven for 12-15 minutes until salmon flakes easily with a fork.
  5. While baking, heat sesame oil in a skillet over medium-high heat. Add bok choy and stir-fry for about 4-5 minutes until tender.
  6. Serve the salmon alongside the sautéed bok choy; drizzle any remaining glaze over them.
