- 2 cups roasted butternut squash (about 1 medium squash)
- 1 pound Italian sausage (spicy or mild)
- 1/4 cup fresh sage leaves
- 15 oz whole milk ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the butternut squash in half, remove seeds, drizzle with olive oil, season with salt and pepper, and roast cut-side down for 30-40 minutes until tender.
- In a skillet, brown the Italian sausage over medium heat, breaking it into pieces. Add chopped sage leaves and cook until fragrant.
- In a bowl, mix ricotta cheese with salt, pepper, and half of the grated Parmesan.
- In a baking dish, layer roasted squash as the base, followed by half of the sausage mixture and half of the ricotta mixture. Top with mozzarella before repeating layers.
- Cover with foil and bake for 25 minutes; then uncover and bake for an additional 15-20 minutes until bubbly.
