  • 2 cups roasted butternut squash (about 1 medium squash)
  • 1 pound Italian sausage (spicy or mild)
  • 1/4 cup fresh sage leaves
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the butternut squash in half, remove seeds, drizzle with olive oil, season with salt and pepper, and roast cut-side down for 30-40 minutes until tender.
  3. In a skillet, brown the Italian sausage over medium heat, breaking it into pieces. Add chopped sage leaves and cook until fragrant.
  4. In a bowl, mix ricotta cheese with salt, pepper, and half of the grated Parmesan.
  5. In a baking dish, layer roasted squash as the base, followed by half of the sausage mixture and half of the ricotta mixture. Top with mozzarella before repeating layers.
  6. Cover with foil and bake for 25 minutes; then uncover and bake for an additional 15-20 minutes until bubbly.
