  • 34 boneless, skinless chicken breasts
  • 2 bell peppers (1 red, 1 yellow), sliced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh basil (optional)

Instructions

  1. Chop bell peppers into strips and dice the onion. Mince garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for about 5 minutes per side until golden brown. Remove from pan.
  3. In the same pan, add onions and garlic; sauté until fragrant (about 3 minutes).
  4. Stir in crushed tomatoes and bell peppers. Return chicken to the pan and sprinkle with Italian seasoning. Simmer for 30 minutes.
  5. Cover and cook on low until chicken reaches an internal temperature of 165°F (74°C).
  6. Plate over pasta or rice, garnish with fresh basil if desired.
