  • 4 boneless skinless chicken breasts (1.5 lbs)
  • 2 large sweet potatoes (about 1 lb), peeled and cubed
  • 1/2 cup pure honey
  • 1/2 cup BBQ sauce
  • 4 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp low-sodium soy sauce
  • 1 tsp dried thyme or rosemary

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix honey, BBQ sauce, minced garlic, soy sauce, thyme, salt, and pepper. Coat each chicken breast in this mixture.
  3. Peel and cube sweet potatoes into uniform pieces for even cooking.
  4. Spread sweet potato cubes on one half of the baking sheet; place coated chicken breasts on the other half.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and is caramelized.
  6. Let rest for five minutes before serving.
