  • 1 lb lean ground beef
  • 1 cup diced bell peppers (any color)
  • 1 packet taco seasoning (about 1 oz)
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat if necessary.
  2. Add diced bell peppers and sauté for 3-4 minutes until softened.
  3. Stir in the rice and taco seasoning until well coated.
  4. Pour in the diced tomatoes and 2 cups of water or broth; bring to a boil.
