  • 8 oz orecchiette pasta
  • 2 tbsp olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz fresh cremini or shiitake mushrooms, sliced
  • 2 tsp fresh thyme leaves
  • Salt and pepper to taste
  • 1/2 cup reserved pasta water
  • 1/4 cup freshly grated Parmesan cheese

Instructions

  1. Cook the orecchiette in salted boiling water according to package instructions until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add garlic and cook until fragrant (1 minute).
  3. Stir in sliced mushrooms and thyme; cook until mushrooms are golden brown (7-8 minutes).
  4. Gradually add reserved pasta water while stirring to create a silky sauce. Season with salt and pepper.
  5. Toss the cooked orecchiette into the skillet until well combined with the sauce. Adjust consistency with more pasta water if necessary.
  6. Remove from heat and sprinkle with Parmesan cheese before serving.
