Description

  • Cream cheese frosting (store-bought or homemade)

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Cream Butter and Sugars: In another bowl, beat butter, brown sugar, and granulated sugar until fluffy. Add egg and vanilla, mixing well.
  4. Combine Mixtures: Gradually mix the dry ingredients into the wet mixture. Fold in grated carrots, oats, and walnuts (if using).
  5. Bake: Drop spoonfuls of dough onto the prepared baking sheet. Bake for 12-15 minutes, or until edges are golden. Cool completely.
  6. Frost and Serve: Spread cream cheese frosting on each cookie. Serve and enjoy!
