- 1 cup dry orzo pasta
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley or basil, chopped

- Juice of 1 lemon
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Cook the orzo in salted boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
- While the pasta cooks, chop the cucumber, cherry tomatoes, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined.
- In a large bowl, combine the cooked orzo with veggies and feta cheese. Drizzle dressing over and toss gently to coat.
