  • 4 large eggs (room temperature)
  • 2 tsp baking powder
  • 1 cup whole milk
  • 2 tsp pure vanilla extract
  • ¼ tsp pistachio extract (optional)
  • 2 cups powdered sugar (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and dust with flour.
  2. In a food processor, pulse pistachios until finely ground. Set aside some whole pistachios for decoration.
  3. In a large mixing bowl, beat softened butter and granulated sugar until fluffy (about 3-5 minutes).
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla and optional pistachio extract.
  5. Gradually mix in the flour combined with baking powder and alternately add milk until just combined.
  6. Fold in ground pistachios gently until evenly distributed.
  7. Divide batter between prepared pans and smooth tops. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Allow cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely before frosting.
