  • 4 oz dark chocolate (70% cocoa)
  • 1/2 cup unsalted butter (room temperature)
  • 1/2 cup all-purpose flour (sifted)
  • 1/2 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/4 cup powdered sugar (for dusting)
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 425°F (220°C). Grease four ramekins with butter and dust with flour.
  2. In a microwave-safe bowl, melt dark chocolate and butter together in short bursts until smooth.
  3. In a separate bowl, whisk flour and salt until combined.
  4. In another bowl, whisk eggs and granulated sugar until pale. Gradually add the melted chocolate mixture while stirring gently.
  5. Fold in dry ingredients until just combined; then fold in chopped pistachios.
  6. Pour batter into prepared ramekins, filling them three-quarters full.
  7. Bake for 12-14 minutes until edges are firm but centers remain soft. Cool slightly before inverting onto plates.
