  • 3 lbs beef chuck roast
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, chopped
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Sear the beef chuck roast in a hot skillet over medium-high heat for 4-5 minutes on each side until browned.
  2. Remove the roast and sauté diced onions and minced garlic in the same skillet for about 3 minutes until fragrant.
  3. Transfer the seared roast to the crock pot and add chopped carrots, potatoes, sautéed onions, garlic, beef broth, Worcestershire sauce, thyme, and rosemary.
  4. Season with salt and pepper. Cover and cook on low for 8-10 hours or high for 4-5 hours.
  5. Once done, shred or slice the roast and serve with cooked vegetables and rich gravy.
