- 3 lbs beef chuck roast
- 4 medium carrots, chopped
- 4 medium Yukon Gold potatoes, chopped

- 2 sprigs fresh rosemary
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
Instructions
- Sear the beef chuck roast in a hot skillet over medium-high heat for 4-5 minutes on each side until browned.
- Remove the roast and sauté diced onions and minced garlic in the same skillet for about 3 minutes until fragrant.
- Transfer the seared roast to the crock pot and add chopped carrots, potatoes, sautéed onions, garlic, beef broth, Worcestershire sauce, thyme, and rosemary.
- Season with salt and pepper. Cover and cook on low for 8-10 hours or high for 4-5 hours.
