Description

Potato Leek Soup is the ultimate comfort food, featuring a creamy blend of sautéed leeks and buttery potatoes. This heartwarming dish is perfect for chilly days, offering warmth and nostalgia in every bowl. With just a few simple ingredients, this soup is easy to prepare and will delight your family and friends with its rich flavors and velvety texture.

Ingredients

Scale
  • 4 medium leeks, cleaned and sliced
  • 3 large russet potatoes (about 1.5 lbs), peeled and diced
  • 4 tablespoons unsalted butter
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Clean the leeks by slicing them lengthwise and rinsing under cold water to remove grit. Chop into half-moon shapes.
  2. In a large pot over medium heat, melt butter. Add leeks and sauté until translucent (about 5-7 minutes).
  3. Add diced potatoes and vegetable broth; bring to a gentle boil, then reduce heat to low. Cover and simmer for 20-25 minutes until potatoes are tender.
  4. Remove from heat; let cool slightly before pureeing using an immersion blender until smooth.
  5. Stir in heavy cream, season with salt and pepper, then serve hot, garnished with cracked pepper or chives.
