Ingredients

  • 1 cup pumpkin puree
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup dark or milk chocolate, melted
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup graham cracker crumbs

Instructions

  1. In a large bowl, combine pumpkin puree, softened cream cheese, powdered sugar, vanilla extract, cinnamon, and nutmeg. Mix until smooth.
  2. Cover and chill the mixture in the refrigerator for at least one hour.
  3. Once chilled, scoop out portions with a cookie scoop and roll them into one-inch balls.
  4. Melt the chocolate in a microwave-safe bowl until smooth.
  5. Dip each truffle into melted chocolate and let excess drip off before placing them on parchment paper.
  6. Roll each truffle in graham cracker crumbs while still wet. Let set completely at room temperature or refrigerate until firm.
