  • 1 cup canned pumpkin puree
  • 1 tsp baking powder

  • 2 large eggs (room temperature)
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup unsalted butter (room temperature)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, melt the unsalted butter until warm. Mix in both sugars until fluffy.
  3. Add eggs one at a time and then stir in pumpkin puree until smooth.
  4. In another bowl, sift together flour, baking powder, and cinnamon.
  5. Gradually fold dry ingredients into the wet mixture until just combined.
  6. Fill each cupcake liner about two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
