  3. In another bowl, mix pumpkin puree, melted butter, milk, and egg until smooth.
  4. Fold the dry ingredients into the wet mixture until just combined; do not overmix.
  5. Fill each muffin cup about two-thirds full with batter.
  6. Bake for 10-12 minutes until golden brown and springy to touch.
  7. Allow to cool slightly before rolling in cinnamon sugar.
