  • 2 cups cubed fresh pumpkin
  • 4 oz soft goat cheese
  • 4 cups mixed greens (arugula & spinach)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (aged)
  • 1/2 cup toasted walnuts
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Cut the pumpkin in half, remove seeds, and cube it.
  2. Toss pumpkin cubes in olive oil, salt, and pepper, then spread on a parchment-lined baking sheet.
  3. Roast for 25-30 minutes until golden brown and tender.
  4. In a large bowl, combine mixed greens.
  5. For the dressing, whisk together olive oil and balsamic vinegar with a pinch of salt and pepper.
  6. Once the pumpkin has cooled slightly, add it to the greens along with crumbled goat cheese and walnuts. Drizzle with dressing and toss gently.
