  • 24 ladyfingers
  • 1 cup mascarpone cheese
  • ½ cup coconut cream (unsweetened)
  • ¼ cup granulated sugar

  • ½ cup toasted coconut flakes (for garnish)
  • 2 tbsp cocoa powder (for dusting)

Instructions

  1. Brew espresso or strong coffee and let it cool slightly. Add sugar while hot to dissolve completely.
  2. In a bowl, combine mascarpone cheese, coconut cream, sugar, and vanilla extract; mix until smooth and creamy.
  3. Quickly dip each ladyfinger in the cooled coffee mixture without soaking too long.
  4. In a serving dish, layer soaked ladyfingers followed by the mascarpone filling. Repeat until all ingredients are used (aim for at least three layers).
  5. Dust cocoa powder on top and sprinkle with toasted coconut flakes. Refrigerate overnight for best results.
