- 1 cup graham cracker crumbs
- 3 tablespoons unsalted butter, melted
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup raspberry jam
- Fresh raspberries (for garnish)
Instructions
- Prepare the Crust: In a small bowl, mix graham cracker crumbs and melted butter. Press the mixture into mini cupcake liners or silicone molds. Refrigerate for 10 minutes.
- Make the Filling: In a medium bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Spoon or pipe the mixture onto the prepared crusts.
- Add Raspberry Swirl: Top each cheesecake bite with a small dollop of raspberry jam. Use a toothpick to swirl it into the cream cheese layer.
- Chill & Garnish: Refrigerate for at least 1 hour or until firm. Garnish with fresh raspberries before serving.
